Shrimp tomato mille-feuille tarts

Basil parmesan mayonnaise

Ingredients

  • 20 g egg yolk
  • 2 g salt
  • 12 g Parmesan, grated
  • 15 g basil oil
  • 15 g sunflower oil
  • 2 g vinegar
  • 10 Piece HUG Mini Snack-Tartelettes Filigrano Butter Carré 3.3cm

Preparations

  • Blend all the ingredients together with an immersion blender to make a mayonnaise.

Shrimps Cherry Tomatoes Mille Fuille

Ingredients

  • 4 Piece giant shrimps
  • 90 g cherry tomatoes red, yellow and green
  • 20 g vinegar
  • 8 g sugar
  • 1 g salt
  • 20 g cognac

Preparations

  • Remove the tails from the prawns.
  • Season the prawns with salt and pepper and flambé in a Lyonnaise pan.
  • Bring the salt, vinegar and sugar to the boil together.
  • Cut the cherry tomatoes into thin slices and brush with the pickling liquid.
  • Cut the prawns into thin slices and layer together with the tomatoes to form a mille feuille.
  • Spread the mayonnaise at the bottom of the tartelette and place the mille feuille on top.
