Dubai Chocolate Tarts

Pistachio Filling

Ingredients

  • 200 g pistachio cream
  • 50 g roasted kadaif (angel hair)
  • 30 g tahini paste
  • 10 g sunflower oil
  • 10 Piece HUG Mini Dessert-Tartelettes Filigrano Butter Round 3.8cm

Preparations

  • Mix the kadaif and oil
  • Add the pistachio cream and tahini, and mix well

Couverture

Ingredients

  • 200 g milk chocolate couverture

Preparations

  • Melt the couverture and temper it at 32 degrees for processing
  • Brush the inside of the tarts with chocolate
  • Fill the tarts ¾ full with the cream
  • Then seal with the couverture
  • Decorate immediately while the couverture is still soft, it holds better

Serving suggestion

  • Pistachios
  • Roasted kadaif
  • Gold dust decorations
