Pineapple Royal Tarts

Pineapple Cream

Ingredients

  • 250 g full cream
  • 25 g sugar
  • 1 g pink pepper, ground
  • 4 g gelatin, soaked and drained
  • 25 g liqueur e.g. pineapple or elderflower liqueur
  • 10 Piece HUG Sablé Tartelettes 7cm

Preparations

  • Bring half of the cream to the boil with the sugar and pepper. Set the pan aside.
  • Stir in the gelatin. Add the liqueur. Beat over iced water until cold.
  • Whip the remaining cream until stiff and fold into the mixture before it jellifies.
  • Pour the cream into the Tartelettes immediately. Leave to cool.

Pineapple Salad

Ingredients

  • 150 g pineapple, peeled
  • 10 g liqueur e.g. pineapple or elderflower liqueur
  • 10 g powdered sugar
  • 2 g mint, cut into fine strips

Preparations

  • Cut the pineapple into 0.5 cm cubes. Marinate with the liqueur, powdered sugar and mint.
  • Spread the pineapple salad into the Tartelettes.

Serving suggestion

  • Mint leaves
