Caramelised White Chocolate Mousse

Ingredients

  • 40 g cream cheese (Philadelphia)
  • 20 g yoghurt
  • 2 g lemon juice
  • 15 g icing sugar
  • 0 sheet gelatine (soaked)
  • 8 g egg yolk
  • 52 g whipped cream
  • 13 g white chocolate
  • 1 pinch of salt
  • 30 Piece HUG One-Bite Dessert Tartelettes Round 3.0 cm

Preparations

  • Caramelise the white chocolate in the oven at 160°C for approx. 10 minutes, let cool and chop.
  • Mix cream cheese, yoghurt, lemon juice, icing sugar, and egg yolk.
  • Dissolve gelatine, temper, and add.
  • Fold in the whipped cream and chopped caramelised chocolate and chill.

Sea Buckthorn-Rosemary Crémeux

Ingredients

  • 40 g sea buckthorn juice
  • 5 g rosemary
  • 40 g whole egg
  • 32 g sugar
  • 58 g butter (cold)
  • 0 sheet gelatine
  • 0 g citras

Preparations

  • Bring sea buckthorn juice and rosemary to a boil, let infuse for 1 hour, then strain.
  • Heat sea buckthorn juice, whole egg, sugar, and citras to 83°C.
  • Add gelatine and let cool.
  • Incorporate cold butter, allow to set slightly and whip.
